Coconut & Lemon bars

This one is a winner and can be altered and changed depending on your sweet tooth. This is amazing as it is but I was conservative with the number of dates I used. See how you go with this amazing raw food treat and let me know.

Ingredients

3 cups of Sunflower seeds

12 pitted dates

Zest & juice of 1 Lemon

10 drops of doTERRA Lemon essential oil

1 Tbsp Chia meal

2 Tbsp of water

2 cups of shredded coconut

Pinch of salt

Method:

Blitz sunflower seeds and chia seeds

Place all other ingredients in the food processor and blitz until a very sticky, smooth dough is formed. (ie speed 9 for 2 minutes in the Thermomix)

Add shredded coconut and mix it through (no blending, maybe on reverse?)

Line a container with parchment paper and squish the mixture in and smooth the top.

Place in the fridge for at least 2 hours and then cut into small squares.
